So it seems the maximum level you want to be if you're anticipating a SL 120 pvp meta and want to have fun in all the different Convenants is SL 132. The biggest limiting factor on that level is territory invasion covenants (Watchdogs, Aldrich Faithful) with a 1.1.(Host Level) formula as the maximum level possible. Invasions have a 0.9.(Invader Level) formula, but you could technically be SL 133 to invade a 120 player, but that puts you out of the territory invasion sweet spot. Sorry if it seems silly to do the math but this actually helps a fair bit for caster-melee builds (specifically my dex-int build) since we need to hit 60 in int or faith to really get some damage out of our spells but still have to points in vitality-endurance-attunement area. Can anyone explain to me the reasoning behind covenants that exclusively invade in one place? For example, Aldrich Faithful/Watchdogs of Farron.
But good lord, I have never seen a faction system more terrible than the one in Dark Souls 3. The idea that they decided to make covenants equippable, and didn't realize that that made the entire system pointless, is a failure of game design that's impossible to believe from a studio that's been around as long as From has. Armor of the Sun Set. While all pieces do not share the same name, it was Solaire of Astora (character from Dark Souls 1) who wore these pieces together, so in a way this is an armor set. 'Chainmail armor and white coat featuring a large rendition of the holy symbol of the sun. The choice attire of a singular Knight of Sunlight from a previous age. Instead of passively increasing the difficulty of the game like Dark Souls 2 's Company of Champions or locking you out of story content like the original's Darkwraiths, Dark Souls 3 's covenants simply give an extra wrinkle to the player-versus-player world. And with one exception, you will be able to freely switch between all of them.
It only makes the areas covered to be impassable by someone playing on the meta level. And Farron Swamp is not exactly forgiving with the Ghru and the constant poison to begin with, the route to Anor Londo is practically impossible due to being chaininvaded (it happened to me that I had 5 invasions one after the other, the only way I survived because I played with a fucking legend. Whoever you are, random sunbro who'se summon sign I found after the Pontiffs bossroom, thank you) and having to deal with the silver knights too. Well, technically I didn't survive, because at the 6.th I simply jumped off a ledge but you get my point. So what is the covenants purpose other than making an area suck almost as much balls as Sens Fortress of Bullshit? So I've farmed two covenants to Rank 2 in about eight hours total using the following method.
I would put on all of the farming gear + 99 luck, but not use any coins. Then I would alternate between hard resets via coiled sword fragment, and soft resets via resting at the bonfire. Each time I finished a run, if I got a drop during that run or the one before it, I would rest at a bonfire, otherwise I would use the coiled sword fragment.

So far I've gotten about one drop or more every 3-4 runs with the exception of one stretch where I had a 20-minute dry spell. This seems to be a great way to farm covenant items from their respective enemies without having to try to rely on getting summoned.
